2. Quesadillas
Stored in a sealed container in the refrigerator before roasting, they are always there for 1 day.
Ingredients
• 1 cup extra-sharp Cheddar cheese, grated
• 1 cup Monterey Jack cheese, grated
• 6 ten-inch flour
• 3 tablespoons butter
Directions:
- In a small bowl, throw together cheese with your hands. On a cutting board, place 3 tortillas side by side and let an edge, about 1Inch thick, evenly divide the cheese mixture between all three of the tortillas.
- In a non-stick pan, melt ½ tablespoon butter over medium heat. Put the other 3 of the tortillas, covered with cheese. Add a filled tortilla into the pan and fry until both sides accept a golden brown color. Once done, add another ½ tablespoon of butter, and repeat for the next 2 filled tortillas.
- If you are ready to fry, place on paper towels and pat dry. Cut tortillas fried in eight, rather thanindividual plates and serve immediately.
